- Prawns (peeled and deveined)
- Red capsicum (finely chopped)
- Ginger (finely chopped)
- Coriander (finely chopped)

How to Make Crispy Sweet & Sour Prawn Cups
1. Prepare the prawn filling: Hand chop the prawns into a rough paste. Combine with capsicum, ginger, coriander, sesame oil, white pepper, sea salt and corn flour. Mix well.
2. Make the wonton cups: Heat oil in a deep pot. Place a wonton wrapper into a small strainer or mould and carefully lower it into the oil. Gently press the centre to form a cup shape and fry until golden. Drain on paper towels.
3. Fry the prawn filling: Scoop small portions of the prawn mixture into the hot oil and fry until golden and cooked through.
4. Assemble: Place one fried prawn ball into each wonton cup.
5. Finish and serve: Drizzle generously with Sweet & Sour Sauce and garnish with chopped spring onions before serving immediately.
